Easy Homemade Marshmallows

2 envelopes gelatin
1 1/4 Cups water
2 Cups white sugar

In a bowl, stir the gelatin and 1/2 cup and 2 tablespoons of the water together and set aside for use later. In a medium saucepan, combine the white sugar and the remaining water, simmering the mixture over a low heat, stirring until the sugar dissolves. Set aside to allow to cool.

Combine the sugar water and gelatin together in one bowl, then beat with an electric mixer on high. Beat until foamy. Spread into a lightly greased 9″ x 13″ pan. Allow to set before cutting into squares.
